Paolo Tegoni is an Adjunct Professor at the Department of Food Science, University of Parma and Professor of 'Culture of Wine and Terroir' of the COMET Master (Culture, Organization and Marketing of territorial Enogastronomy) at the very same university. A former assistant of onboard services for the Airline Alitalia and a professional sommelier in Paris, he has been working as a wine consultant for various enterprises in the Italian horeca sector, starting with the restaurant Antica Corte Pallavicina Relais in Polesine Parmense (PR). He also oversees gastronomic events and territorial marketing, as well teaching food and beverage tasting courses. He holds a degree in Gastronomic Sciences and is a tireless researcher and scholar of the European wine terroir.


This course focuses on approaches to wine tasting and on the analysis of the aspects that affect its quality. In addition it will go in depth on the concept of terroir wine and its various inherent manifestations in an oenological product. The course aims at teaching the fundamentals of wine tasting, Italian oenography culture and the principal wine production of various regions, through the study of different terroir wine.
